Potassium-rich foods may stop fatal blockages from occurring by preventing arteries from hardening. Previous research reveals stiff, inflexible arteries increase a person’s risk of suffering a heart attack or stroke.  The researchers believe potassium regulates genes that maintain artery flexibility.
