Have You Heard Of Funeral Potatoes? I Had Not But Now I Want Them!

I have heard of wedding soup and really enjoy that.  I have never heard of Funeral Potatoes before but now I want them.  What are they? Funeral Potatoes are popular in the West and Midwest and are served not only at funerals, but at church gatherings, holidays, graduation parties and other occasions. The dish was created in Utah.

..the cheesy potato casserole is made with hash browns, cream of mushroom and cream of chicken soup, lots of cheese, lots of butter, lots of sour cream and … cornflakes

Now I have to try them.  There are no shortage of recipes online.  They don’t appear to be very ‘heart smart’.  Perhaps that’s another reason for the name.
